Other Brehm Vineyards 2008 Merlot & 2008 Cab Franc

Jim will you be doing any blending with any of these in the future? I've seen this combination along with a larger percentage of Cab.used in some of the collages from some of the Calf. winerys

Other Brehm Vineyard's Russian River Valley Cabernet

Jim, I used a partial amount of the skins in both wines for tannins and color, about 5 lbs approx. I've since racked into a carboy since initial fermentation has finished.

Other Brehm Vineyard's Russian River Valley Cabernet

Hi Jim, Sounds great. I'd like to try the Sauvignon Blanc next. The reason I was asking about your yield is because you said you got 8 gallons out of it. I got 5 off both with little pressing. I did steam a good part of the skins in a separate batch to use for blending and to see if the flavor...

Other Brehm Vineyard's Russian River Valley Cabernet

Hey Jim, My name is David nice to meet you. Was that one bucket or two you got? I just started my Cab and is fermenting like crazy. Very active. Not much of a kit person so most of my experience is making wines from scratch. I do have about 4 or 5 kits in process but in no hurry to finish any...

    Other Brehm Cabernet Sauvignon

I got my order of 2 - 5 gallon buckets of Brehm Cabernet grapes from the Russian River Sonoma and I am very excited. SG of 1.10 with out having to do a thing to boost the potential alcohol was very impressive. The color is beautiful . Sonoma is my favorite destination for winery hopping. They...

    Concord grape wine fast ferment

Hi there, I have made wine from secondary. The wine will be thinner and grape flavor not as strong but can easilily be remedied by adding some frozen Welches concentrate from the grocery store to boost the flavor a bit. Be sure to check SG before adding any additional sugar because the...

    Minute Maid

One thing I noticed when shopping for juices to make the Pomegranate/Blueberrry wine. Watch the ingredients. Besides looking for additives look to see what the main ingredient is. It will be the first few listed. Many of the brands had alot of apple juice in them. It will say Pomegranate/...

    Freezing Fruit

I've been freezing my fruit for years now and don't add the Meta til the fruit goes in the primary. I also destone fruit and slice up before putting it in gal. freezer backs. I put four pounds of fruit in each bag because most recipes call for that much fruit per gal.

    Chocolate Strawberry wine

Wade if you can find that brand I told you about its not expensive at all. Seven or eight bucks tops for about a liter bottle or what ever they call it. If you can't find it there and you want it let me know I can pick you up some here and send it to ya.

    Minute Maid

I have the Blueberry/Pomegranate wine going right now. It is about 8 months old. I've thought about an orange wine having tried one at a winery in Florida a year ago. Thought it was fantastic. The recipes I have call for using some of the zest of the skin minus the white part. The white is...

    Chocolate Strawberry wine

Hey Wade, if you have never tried any of the Oregon fruit bases you mightwant to givethata try on your next go around. I have used them before with great results. For the chocolate flavor try the chocolate liquer that George sells. Its about a 2 oz. bottle but alittle goes a long way.

Does anyone know where to purchase one of these steamers now?

    Blending

I am notorious for blending fruit to come up with good combinations. Usually I'm looking to balance to smooth a wine out. I made the mistake of taking some of my favorite Cab wines only to totally destroy a perfectly good wine. I don't do that anymore. I do blend fruit wines very commonly now...

    Muscadine wine- experiment

I agree Wade. It is a very unique wine and a Southern thing! Nothing like it. I have experimented with blending it with other fruits like Strawberry. But I used the Bronze variety to keep the color of the wine from being to dark. It came out a blush. I was trying to see if I could use it as a...

    RASPBERRY WINE

I use rasberry wine as a mixer also. Alittle can go a long way becaues it is a dominate fruit and can easily take over in flavor so I think the tip is add alittle at a time to get the balance you are looking for.

    Loquats?

I've made several plum wines but never this one. Plu is a fruit wine I make in some variety evry year because it is a favorite of mine and those I share it with. All have been very pleasant in fruityness. I prefer to blend them with a peach or mango wine for balance. But they are good by...

    Blackberry Questions

Great choice of berry's. I've made a couple of blackberry wines simular to the recipe you are using. One thing I have noticed about blackberry and rasberry wines is they are a dominate fruit. Very fruit forward. I like to keep a bottle of Wine Expert's Red Grape concentrate on hand to...

    Star Fruit Wine

I bought some star fruit from Wal-Mart that I had our produce manager order for me. I paid .85 each. I bought 30 of them that equalled 8 pounds. I will add that to what I got from my nephew. Its a little expense bought I think it will be worth it. Eden Winery in Florida makes a very nice one.

    Star Fruit Wine

Has anyone ever made Star Fruit wine. Had some from a winery in Florida last year. It was a mildly sweet wine with a floral scent. Very nice. My nephew in South Florida had some growing so I brought some back with me. Thought I would try my hand at it. I love the unusual!
