    Just out of curiosity, what do you mean by make a starter?? I don't understand that. I called Winexpert. They explained what their #'s meant on the box. They suggest to use the kit within a year of being packed, but you can use it up to 2 years. My kit is 13 months old, so I'm going to go...

    Thanks! Where do you find the expiration date on the kit? I'm pretty sure that May 2007 was the date it was packed or something like that, since I bought the kit around August. ETA: I found my answer Thanks!Edited by: Lmcirig

    Hi All- remember me? I had to leave for a while, had a lot of stuff happening at home. But I'm back :) So last year I bought Green apple reisling, which I had intended to make right away. But then stuff happened. The date on the box says May 2007. Is it still okay to make?

    Thanks for sharing smurfe! My husband asked me this morning if I was REALLY going to wait so long to drink the wine I started. He made me think I was a little crazy, but I will try real hard to wait. And I'd be interested in hearing about some quick drinking suggestions as well

    Thanks- we hope so too. Okay thanks. Well the instructions say to wait 8 days to clearand then rack. So what you're saying is I could rack in the 8 days, and then rack again in a couple months? (like what 2?) I'm not in a rush- I'd like the wine to be good Otherwise what's the point...

    I meant to do the stabilising the day after I asked if my SG was too low. Unfortunatley, tragedy struck and my future mother in-law had a stroke. I've been at the hospital every night after work, with very little time to do anything else. So I left the wine. I didn't get around to degassing...

    Thats okay Brian- I can't do the wine lingo yet either I've never even seen this lead pencil thing before! I guess the wine will be about 4 months old by Christmas. I may open a bottle or 2. It makes me feel better knowing that you've made this wine too- thanks!

    Brian, did you bulk age it at all, or did you go right into the bottle? Now I can't wait to try some I'm going toattempt to wait it out before I taste any. Thanks! I wonder though if it'll be okay to drink by Christmas... You should take a few bottles and put them under lock and key...

    Thanks I think at the first step it was 1.096. Don't know how I can remember that since I can hardly remember what I had for dinner last night Actually the hydrometer does read at an angle, for some reason it just doesn't like to stay straight! So I wasn't sure if I was reading it...
