making a pinot gris and during the process where i rack into another carboy i accidentally got some of the lees in the clean carboy..wine now is cloudy do i just wait and rerack, do nnothign wait to clear and go to bottle in a month, or add another fining agent and then rerack... ??? help

clear wine with sediment on the bottom - went to siphon off wine into new carboy and got a bunch of sediment into the new racking do i re-rack ??

I am goinng to the polishing racking and i need to top off but dont want to use water - what should i do
