I crush the k-meta with 2 spoons before i add. Then use the whip degasser to degass as well as mix up the k-meta and sorbate. I was worried the first time i used the degasser it was pushed through a bung i used it and had white floaties on the top of my wine from where the degasser meets the...

Since starting my Joes AO i have a facination with mead's. So i am trying a recipe i found that was also posted by Joe M. Its called a quick mead using 64oz juices. When they say quick they mean about a month and they are sweet. Here is a picture of both meads. on the left is from a 64oz...

    now what??

Good point Tomy. I forgot to mention the sterilization. I just do it without thinking about it, It goes without saying for me but you should sterilize anything that will come in contact with your wine!!! I use a mixture of kmeta and citric acid. Very potent for that applacation.

    now what??

If the directions say thati would check it at 4 or 5 days. It will take a few days to get to the right s.g. If you check at day 4 then again at day 5 you could get an idea of how many points its droping per day, roughly. But its best not to mess with it more than you have to. This is my opinion...

I started Joe M's Anciant Orange on 12/31 I am following the directions. It has been almost 2 months so im close to bottleing. I believe leaving it on the fruit will add to its flavor. My First Ancient Orange

I have a batch going and its been just over a month. Still smells great and is very clear already. I hope it tastes as good as it smells. This is my first mead, i have 2 more batches going. One is a recipe for a 5 week mead by Joe M and the other is my own creation.

    Which Acid Types to Use?

I wouldn't add any. I have only seen a couple recipes that say to add any but I'm not sure i would. I currently have a batch of Joe M's Ancient orange mead working away for about a month now, and I'm considering making a mead from 100% cranberry/pomegranate juice (no water added just juice) I...

    corkers?

I dont mind spending the money as long as i get what i pay for. I thought there was a problem with the Portuguese floor corker, it was scoring some types of corks causing leakage.
