    too late for that paubin. ok, so it has been settling for a few days now , but i keep hearing it bubble, about 1 per hour or two. is this nomal? should i bottle it?

    ok, i finally got some cherries from WA on a road trip this past weekend. Bing i think....but they are big and sweet and i am cooking them down right now. going to rack in a few min and take a reading. will post more soon. btw it tastes really good. has a little bit too much alcohol taste...

    k, i will rack it. its not going down no clearning additives i just moved it, but i usually settles back down in aday or two but this one isnt. maybe it is stuck to the side so rack it and cool it. how cold. its nice and cold outside i used an ice water bath. took about 15-20min

    so this is a moose drool clone. it has been 4 weeks since it was put into the secondary. (i have been busy with a remodel i had to start + work...well you know) and so i go to bottle it this past weekend and it is two toned. why is this? should i bottle it? or wait or what? thanks

    thanks guys, i racked it and added sorbate and sulfite, then added the oak and a vanilla bean. now i get to wait i guess.

    ok...so it hasnt bubbled all day. i think its done. and i am leaving for 4 days this weekend there is a 1/4 of the sediment there was before i racked it yesterday should i rack it again and add my sorbate and meta before i leave or wait until Monday/tuesday to do it? ohh, and when i get to...

    i racked it off the lees. 0.997 was the gravity. it tasted much better a few days ago when it was 1.030. its much stronger alcohol taste. with a nice hint of chocolate. so i am leaving this weekend for the holiday.

    thanks guys. just checked the sg and it was 1.080 so i added some more sugar and brought the water up to 2 gal. will check it again in a few hours. tasts great though. not too much chocolate, can still taste the cherry. with the cherries in the liquid, it hits the 3 gal mark. so when i pull the...

    yea i am going to let it settle again and rack it before bottling i did a test and liked about 2000ml of simple sugar and 1500 of plum juice pack. but i only had 400ml of simple sugar and i only made 650 of plum juice pack. i will taste it in a min.
