Took the lid off yesterday, noticed tiny bubbles forming. Just took the lid off now and there is foam and a sizzling sound.

My wife bought me a merlot wine making kit a few years ago. It says best if used before November 2018. I was thinking of making it anyways but with new yeast, bentonite.........etc. Any thoughts? Thank you in advance.
