    To much sulfite

    It's a 6 gallon batch. I was planing on racking it a couple time's anyway. It'd be easy enough to add a couple extra racks in there and splash it around some. I assume it'll be ok to leave it as is until it clears then splash rack it a few time's before oaking it? Thanks for the help.

    I stabilized my batch of wine last nite, adding the sulfite and sorbate. And degassed it. But, I added 1/4 tsp of sufite per gallon should have been 1/8. I plan on letting it clear then racking, adding oak and letting sit for a few months. Then filter and bottle. Will just letting it sit...

    I decided to try to make a batch of wine from welch's frozen concentrate. The directions called for 1 tsp per gallon of yeast nutrient. I added yeast energizer. When I realized I grabbed the wrong container I went ahead and added the nutrient too. How bad is this going to screw me up?

    Yeah, salisbury is on the eastern shore of MD, below DE. It's pretty low here, and we are surrounded by water. There are a few people with basements in the area, but not many.

    I figured that's what you did. Update, I spent a hour last night cleaning the refrigerator in the apartment above me. Made up the wine per instructions, and as of the last time I checked the wine was at 75, I'll check it when I get off work. It's probably a bit cooler now.
