    Back sweetening with juice?

Since it's not changed in the last 10 weeks, should I add a few grains of yeast to kick it, or add a couple tablespoons of juice....or, just let it ride as is and check it in a month?

    Back sweetening with juice?

Batch was started 12-27-20, racked to gallon jugs on 1-1-21. Started at 1.08 SG. Racked 2-5-21 at sg 1.02.

    Back sweetening with juice?

I racked my Niagara wine on 2-5-21. S.G. 1.02. It's clear, with no visible co2 coming off. I tested S.G. and it's still at 1.02. I like the taste and the aftertaste is great. It's dryer than I would want it so I thought of sweetening it and bottling it. Can I use white grape juice to sweeten it...

Looks like I wasted a small fortune on winemaking gear!

I like your comment. Today's generation AND its immediate predecessor know very little about patience. I'm 74 and just learning what it takes to make a good wine. I'm ready to bottle my first attempt that I made from my own Niagara grapes. I'll see if this old duffer has paid attention to...

    Primary fermentation question

Starting another batch isn't a bad idea. I've got 6 pounds of red plums in the freezer. Do you have a recipe for a one gallon plum wine?

    Primary fermentation question

The wine might be patient but I'm sure not. However, thank you for your encouragement and guidance. I'll do another test in a month and see what happens.

    Primary fermentation question

The commercial wine was dark. I started adding it, but by then it was too late. As to the sweetness, it was very pleasant. Not really "sweet", more of an off dry. How about I let it sit a month, then test SG again. If it's still stuck, I can add the yeast and nutrients. Would that be a...

    Primary fermentation question

Started January 1 with Szg of 1.082. 1-6 racked to jugs with SG of 1.06. Today racked off sediment and SG is 1.022. Wine has the full aroma of the grapes and is wonderful. I did top off the partial jug with some 2003 Niagara frok Oak Knolls. As you can see by the picture, it turned fairly...

    Primary fermentation question

Ok, I think I'm ready to rack to get rid of the sediment. No CO2 activities and the wine is pretty clear, however I am still cloudy on how to proceed. If I understand the process, I would open one jug and take out enough wine to take my hydrometer reading. Record the reading then finish...

    Primary fermentation question

Thank you. I looked closely at the wine and very tiny bubbles of CO2 are still rising. I think it's just my eagerness to get my first taste. I'll wait another couple weeks then reconsider racking.

Should I top them off with Niagara juice?

    Primary fermentation question

I really appreciate all the comments here and have helped my foray into wine making be very exciting. Now I have another question. I racked the Niagara wine into my gallon jugs on the 6th of the month. It seems like it's not time to rack again, but I have about an inch of sediment in each jug...
