Thanks for your comment. Is that not the same as just leaving it where it is for a few more days? Or are there other things to consider?

Hi All Recently started a Le20 Torrontes Muscat wine kit. The kit says fermentation should be complete after 14 days and to rack into another carboy and add the stabilizer. I have a SG reading of 0.990 after 7 days so am assuming fermentation has finished. Would it be better to leave it anyway...
