I made this kit two years ago. I have had 4 bottles in the past month and it is the best kit I have made. There is hugh fruit and spice with a little oak. If you have never made RJS Winery Series yet, you need to start. It put the CC Red Mount Cab to shame. I have been making kits for...
Mine is about two years old now. It was very good two months ago when I had a bottle and I mean very good (Good fruit and smell). Just opened another last night and it was shut down, with little fruit and smell. Some reds need to hit the 3 year mark before they are ready. My CC Red Mount...
I am from Oregon. We drink a lot of PG from here and can tell you some commercial wine do use Oak. I don't like the oak in PG, so we don't drink those wines. Just leave it out.
I have made both the Cab and Syrah. Both have turned out to ge very good. The Cab is two years old and its really good. It does take some time to open up in the decantor. The Syrah is at the 18 month age and it's also going to be great. I would make both kits again.
You can tell if it works by looking in the bottom of your carboy. If you see stuff at the bottom then its working fine. I let most of my reds sit for 4-6 months and rack about two to three times in that time period. It works great for me.
I would also say you need to stir again and warm the wine to 75 degs. It really helps to get the CO2 out. I have made 30 kits so far and if they taste like that there is still CO2. Stir again and wait for a few days and then try again. The 75 deg really helps.
