You'll have to change your signature from a "none:(" to include your new wine in primary! I just bottled a Grand Cru Intl Syrah and I agree that even the must tasted great. I am waiting a while on these bottles and hoping that they age to something fantastic. Good luck with your Zin...you'll...
I have just started my first Breezin kit (Black Cherry Pinot Noir) and noticed that the wine stays in primary until day 14 (SG 0.998)and then you go straight to stabilizing. The only other kit I have done there was a secondary fermentaion in the carboy. I have back sweetend this kit to 1.084...

I have a batch of CC Intl Syrah clearing right now and am wondering exactly when to bottle. I know that the wine can stay in the carboy for a long time, but I don't plan on bulk aging because I would like to have the carboy to start another kit! :)

It's brand spanking new. I'm not bulk aging it simply because I am still pretty new at this and I need the carboy! :) I will be bottling it next week after giving it a little extra time to clear, but it really is fresh out of the gate. It still tastes very young...I can smell the kmet in it, but...
I just spent an hour last night removing old labels and washing bottles. It amazes me the crazy glue some companies use to keep their labels on!!! A couple just floated off in the water and others I had to scrape with a razor blade and they still have a little tackiness to them. I can't wait...
