    Thank you all for the advice, I will make a starter next time to minimize spoiling. The fermentation has started steadily after about 48 hours. I have noticed that the fermentation isn't foaming like others i've made, but this is most likely due to it being a cider. Room temp is between 62-68...

    Alright Thank you. I guess there probably are differences in the aggressiveness of fermentation depending on if you use fresh fruit vs juice. If it turns out well I'll shoot for a 5 gallon batch next time :dg

    Yea the hydrometer is great.. definitely fragile. Actually it's not a kit, this is my first try at making wine so I used the simple welch's grape juice method. I enjoy it very much and I am going to look at some kits to for my next batch.

    Ok here is an update.. I received the hydrometer yesterday, took a reading and it was .998. I took one more today and it was still at .998. So does this mean I can now add my Sodium Benzoate to stabilize the wine before I bottle it? Thanks Jeremy

    Ok, I will warm it up and let it continue. I have not taken any readings yet because I do not own a hydrometer. However, I have one on order, so I will have to learn how to use it and take some readings.
