    What's wrong with his wine?!

I called him and ask about his specs and he has nothing! I guess it was suppose to be a simple recipe that he found on some blog. Somewhere on the Internet a woman from India has a pineapple wine recipe posted that asks for pineapple peel, sugar, water, egg whites, and yeast. He said he mixed...

    What's wrong with his wine?!

Well, had a friend bring a bottle of homemade wine to me to see if I could figure out what was wrong with it and I have no idea! I am a beginner too and I don't know how he got this flavors. It was a pineapple wine. It tasted fruity, very sweet, very alcoholic, and BITTER?! Not sure how it...

    Stopping fermentation

If he chilled the wine to slow or halt fermentation then are there fining agents that might pull out some of the yeast?

Thank you so much for all your help! Looks like I may have a few options to consider!

    Bread yeast wine

Could try strong flavored fruits like blackberries, red grapes, plums, cherries, or a combination of? Could mellow out once it's bottled and ages a bit but you may end up with yeast in your bottles if you can't get it to clear completely before bottling. I wonder what kind of shelf life a bread...

    Bread yeast wine

There seems to be positives and negatives about using bread yeast. I suppose if you have to use it, then maybe use fruits that have a strong flavor. Blackberries, red grapes, maybe plums or cherries? Or combination of? Could order wine yeast online and have it shipped to your door for free...

    Flavoring?

I am just generally curious if it could be done or not. I have a few I am working on but if I had one that I wish had more flavors it would be my chocolate cherry. Didn't realize that the chocolate would be so strong. It definitely smells fruity though but not so much in taste. I am thinking of...

    Flavoring?

I have a general question. Say you have a wine that went through primary fermentation and has been racked into a secondary vessel. Fermentation is still active. If you taste the wine and some of the flavors you wanted are there but others are muted or non existant, can you add to the wine? Will...

    Shelf Life?

Wow! That is much longer than I anticipated for a fruit wine! I was hoping for at least 3 to five years! Maybe I will be good at it some day and work more towards making a more technically sound wine in hopes that I too can produce something with a long shelf life! It would be nice to have...

    Shelf Life?

I have used k - meta for all wines. My first wine, mixed fruit, I used K-meta, yeast nutrient, and pectic enzyme. The only thing really different is I found an article online about using strong black tea and lemon juice in replace of nutrient and I wanted to see how that would work with the...

    Chocolate wine? Anyone?

Ah, see, not being a beer drinker I wouldn't have appreciated it in that way. I was expecting chocolate in the form of nibs or cocoa. Expected a real chocolate flavored beer.

    Chocolate wine? Anyone?

Meant to say Keller! Auto correct on my phone changed it to Killer! Sorry!

    Chocolate wine? Anyone?

Have v you had one finish with good flavors? Was it very chocolatey? Boulevard makes a chocolate beer, not a huge fan of beer, that I tried and didn't care for. The hops were strong and I didn't really get much chocolate flavor. Hoping wine is different!
