I used to use Sun Cal concentrates but now I don't seem to be able to find any. Does anyone know if they are still in business? It came in 46 oz cans and required the addition of some acid blend and yeast nut.
I will have to look thru my dads wood shed and see
what I can find. I would like to have a quarter for
every piece of white oak my dad has put thru his
stove and fire place .
Have you tried oak with a concord wine before? I'm
going to start 6 gal next week and I'm thinking I'll add...

I'll make it easy on everyone. I just clip the ring off the
end of a bottle brush put it in my cordless drill and
whip-it or stir it or what ever you want to call it. I have
yet mto wear out a brush doing this. Plus it makes
bottle cleaning so much easier. Just add a little
bleach...
I have a friend that has a wine that recently finished
in a full 5 gal. carboy. It has white specks floating on
the surface that don't sink when disturbed. He says
they look like yeast . Anyone have any ideas as to
what it may be?
Cheese, home made cheese. I'm making some
right now. Contact the New England Cheese Making
Co. on the web. They sell mixes for making all kinds
of soft cheeses. So easy to make. When the cheese
is done (overnight) mix it with a dry soup mix And get
out the crackers.
I make wine because I can remember helping my
Grandfather make wine before I even started
school.Every year he made wine from his row of
concord grapes. Made it the old fashioned way didn't
add anything just crush and ferment. He did add
some sugar. Most years it turned out great.
you cannot tell me that Budweiser or Coors (who
claim they're using the German "Reinheitsgebot" as
their Mantra) are not using any forms of sanitization
things either. They'd be sent to the FDA, health
department, and all other departments that could
shut them down.

Beautiful color, are the white deposits on the outside
or inside of the carboy? If their on the inside it could it
be pectin? I see alot of lees I think its time to rack.
