Do I need to let this one sit longer than the instructions say, between day 40-54 in carboy ? I plan on ageing in bottle for at least a year, maybe longer cause from prior experience these reds just keep getting better. Will the # 9 corks be ok for longer than 1.5 years or should I use synthetic ?
Have it going in primary now and seems to be doing well. Day 11 and have punched down bag of skins every day, has almost stopped fermentation at this point. Three more days and I will check the S.G. and if it is within range will re-rack to carboy. Smells really good even now. Will probably age...
Thanks for the info, I know it takes a long time for elderberry to mature, at least 1 year. Not happy with that but, maybe it will be worth it in the end results.
