    Understood, but if my goal is to push the yeast to its full capacity 18% then re-rack and let it age at least a year.. so I thought I could just add sugars to keep it going

    Yes I realized that after my first batch.. now this is just a technical issue with the thermostat (as mentioned above)that accidentally accelerated thing I bit much. But thanks for your comment😇
