Oops, I put 1 tsp of k meta into the bottom of a 6 gal carboy before racking a kit of pinot grigio into it for aging. I thought that seemed like a lot for 1/4 tsp but it didn't click-in, turns out I used the wrong scoop in my set. Did I ruin my wine? Or should I just let it age for 6 months or a year instead of 3 months, without adding more k meta?
