I basically followed the dragon blood recipe. I didn't use as much lemon juice and used 10# of frozen blackberries. Used EC-1118 yeast. Back sweetened with two cans of old orchard Apple cherry.

The wine has a light flavor, which is pretty good, but the alcohol flavor is a bit stronger then I'd like. Does it need to age out? Another can or two of old orchard?

It's still in a carboy and clear.

I'd try another can or 2, but only for the "light on flavor" problem. For the "hot ness" only time will help that. I had a hot peach that took 2 years to mellow out.

I agree ^^
Let it sit for at least 6 months after backsweetening a bit and see how it has evolved

I'm hoping it will age out. Going to add another can and let it sit a while.

Added another can and about two cups of inverted sugar. Tastes a lot better. Now for the hard part...patience.

Vacuumpumpman...I didn't win, but thanks for offering up the pump to the forum!
