Ok I just pulled out my instructions from the Vintners reserve kit I did it's a different kit but I'm sure the instructions are the same for all the kits they make .So in step 3 after you add the stablizer & clearing agents you add the F-pack then the SG reading should be between .998 - 1.005 . So add yuor sweetener you decide to use slowly & taste often ,like someone else already becareful not to over sweeten , aiming for a range they suggest . The kit I did we found way to tart for our taste and just didn't have a good flavour so we won't be making it again .
 
Day 7

Just checked the SG again on day 7 and it reads 1.014. One more day I take it should be enough to bring the sg down so I can rack.
 
Just racked into carboy, do I need to keep it at the same temp as it was as the as it was when it was fermenting? (65-75)???
