I am making the Elderberry with concentrate from Homewinery.
For those of you that have used their concentrates to make wine I have a question.
Do you use more concentrate to back sweeten and flavor the wine?

Do the fruit flavors come through good enough without adding concentrate after fermentation?

Thanks,
Dave

I backsweeten using just sugar, I take some of the wine out, warm that up add the sugar to that, once I have the sugar melted and has cooled down, I add back to the wine.

Thanks Julie

Thanks Julie,
I like to back sweeten my wine to around 1.010-1.012. I was wondering if this concentrate would end up with a good fruit flavor or might need additional concentrate when I back sweeten.

Dave

I haven't made their elderberry but their blackberry has A very good flavor to it

I like their concentrates but I like my wine DRY . Very dry. No baksweetening. The flavor seems to come through just fine.

Thanks DoctorCAD

Thanks DoctorCAD,
I like mine just a little sweeter. So it looks like back sweetening with just some sugar should work for me.
