    Double Batches of Port Wine

Well, thanks for the advice and all the comments on how wonderful this particular port is! Of course, I already know that since I have just finished my first one last month and it already tastes wonderful and I too have friends clammering after it. So true, 3 gallons doesn't last very long. That...

    White Chocolate Port

Does anyone know why they suggest that you let this port sit for 30 days after stablizing and clearing when it already looks very clear and tastes really fine after two weeks? This RJ Spangols kit recommends 10 days in fermentation until racking and then another 30 days after adding remainder of...

    Double Batches of Port Wine

I have heard pros and cons regarding making double batches of port in the 6 gallon carboys as opposed to the single batches in 3 gallon carboys. Is there any reason why double batches are not a good idea, as long as one uses ALL of the ingredients provided for the kit? Many on the discussion...

Yes, It does recommend filtering, but to contact your distributor. So I thought I would ask the experts!! Boy, this stuff tastes good already! The smell is terrific, it is so beautiful against the light! I am trully excited about it. Glad I got a White Chocolate to try right after this one. I...

    Chocolate Raspberry Port

Is it OK to filter the Port via Vinabrite filter system. My wine is not cloudy or anything, but I have been filtering everything else just to finish it. Can I do the same with the port?

    Mosti Mondiale Piesporter without elderflowers???

Thanks Appleman, I will do just that. BUt the elderflower additive was only about $4, so I ordered one just in case. Piesporter is one of my favorite of the German Whites, so I am really particular, maybe a little OCD about it! BUt I will take your advice and that of the others on this blog, be...

    Mosti Mondiale Piesporter without elderflowers???

Yeah, and My personal choice included elderflowers! I really LIKED the results of that first kit. But I liked it sooo much that I thought I would spend a little more and perhaps get even better results. Never dawned on me that there would be no elderflowers. I had had such great results with...

    Mosti Mondiale Piesporter without elderflowers???

Well, I'm feelin' kinda apprehensive. Gota feeling that this cannot be good. From blogs have gotten impression that more expensive kits would produce better wines. But logic tells me that this particular additive is a major player.

    Mosti Mondiale Piesporter without elderflowers???

OK so, where does the hint of fragrance come from if there are no flowers in the kit?

    Mosti Mondiale Piesporter without elderflowers???

I completed a Piesporter kit this summer from Wine Expert, I believe. Anyway, I loved the outcome. It came with Elderflowers. So I paid a little more, ordered an M&M kit this time and to my surprise, no elderflowers. Now I am a little concerned. I really thought that I needed those for a...

Racking to glass with all Sediment

I am always confused!!!I am talking about the first fermentation stage. Once you have reached 1.04-1.05 SG a lot of kit instructions will tell you to stirr up all sediment, add yeast nutrients and then rack to glass. If kit contains oak, the instructions seem to usually say, add oak chips to...

Racking to glass with all Sediment

IF you are racking to glass for the first time and stirring to be sure you are including all sediment and adding the yeast nutrient and oak, why rack at all? Why not just stir, add the nutrient and and oak and leave it in the fermenter with an airlock?

    I'm Frustrated!! Oak for Barola

OK, so will someone tell me, is the MM Alljuice kit for italian barola supposed to contain oak? I did a MM Vinafera kit earlier this summer and it HAD oak chips. I have started an alljuice kit, it is ready to rack to glass and guess what, no oak chips in the kit. What to do! I do have a Cabernet...

    No Cellar Craft Instructions

My Cellar Craft White Shiraz did not have an instruction sheet in the kit. It is in first fermentation stage and I do not know when to rack to glass. It is at an SG of 1.03 right now. Does anyone know when I should rack and if I leave gross lees or rack everything. Also, do I add any chemicals...
