My question is, what type of bottle would you use for a sparkling melomel? Would I use champagne bottles?
 
I would.

Carbonated pressure is carbonated pressure, no matter what type of liquid its in.
 
Champagne bottles

And a closure designed for pressure. Bottle bombs are no fun. Don't go cheap.
 
You could use beer bottles too. Presentation is not so pretty, but if it isn't something you're going to do often, you might find it pricy to get into the proper corks and bottles and baskets for champagne.
