I have been looking at the automatic shut off bottle fillers by Buon Vino and Farrari. Has anyone used these? I would like to get more consistant in my fill levels and this looks like a good way to achieve that. I have been just tapping it off from a spigoted brew bucket till now.

I was looking at thise and wondering, it appears that they are all Califonia concentrates, not as big as some of the other Kit producers... Any thoughts?

I was wondering how soon I can bottle. I am making a kit and reached the "Stabilizing and Clearing" step. The wine cleared to the point I can read through the carboy overnight! Other than clearing, what is being accomplished by letting the wine sit in the carboy at this stage? Kit...
