    My corker doesn’t do clean corks either so I cut. them flush with a knife. Shrink wrap makes it very professional.

    HI DAWG. I looked up my old notes on it and besides russet potatos I had ginger, orange juice concentrate. I had to use 16 tsp of acid to get to TA=.6. That may have helped some. I borrowed from several recipes. It was just an experiment to use the potatoes that would have gone to waste.

    Thanks,Joe. What else would I do to this kit? The flavor profile talks about lemon, green apple, pineapple, etc. I don’t want to get too carried away with additions! I read about oak, but don’t want to confuse things too much on my first kit of this variety.

    It was a surprise to me. It came out to be a nice crisp white that my wife loves. I think if it were just potatos it would be a bit bland. A side benefit was that we got to eat the potatos!

    Too much yeast, not an air tight fermenter!

    Hi. I am in Southeast, and just finished a blueberry dragons blood. I didn’t have a pH meter and it stalled a couple times. I added a teaspoon of calcium carbonate and it restarted. Yours might be fine, but just in case it isn’t. Anyway, mine finished at 0.994 and all is well at this...

    What are your "Top 10" including equipment/tips/tricks pertaining to Kit Wine Making?

    I haven’t been doing this very long, but I think the AIO pump is going to be my number 1 on any list would make. I just got it so am learning different ways to use it. A pH meter is also important for what I make. Thanks to all for your good ideas.

    Thanks! If it is as good as I hear it is, mine will go quickly too. I think I will opt for moving it into glass in a few days and watch out for overflow. Have the AIO now so that will help with racking and degasssing. My temps in Alaska are probably close to yours since I am. coastal.
