    How to perform extended maceration?

Also coming from the beer world, I know some people suggest that HDPE plastic buckets allow too much oxygen through the walls for extended aging of sour beers. But that's usually 6 months plus. I think you'd be fine for 6-8 weeks EM, but I'd be wary of going much longer, and beer is often...

    Potato Anise Wine

It won't. Mashing grains to convert starch to sugar requires enzymatic activity. Potatoes won't have much of any enzymes active, unless they are actively sprouting (at which point they are somewhat poisonous). And the enzymes required are denatured above about 70C, and completely destroyed by...

Experience homebrewer going for his first wine kit

Racked to a 6 gal Better Bottle for further aging on Saturday with a little Campden for oxidation protection. It's already crystal clear, but I'll give it another couple of months at least before bottling. It's now fully dry and getting a proper wine taste.

    WineXpert "New" instruction set

I just did my first kit with these instructions. I think common sense and homebrewing experience has prevented me ruining it, but I'm not entirely sure. That's clearly just an over-precise conversion from 6 US Gal to litres (although 22.75 is just the decimal way of writing down 22 and 3/4...

Experience homebrewer going for his first wine kit

It's perfectly pleasant to drink, dry enough with strong berry and grape juice type flavors right now. I think it still needs a bit of age to clear, drop the yeast fully and bring out a bit more of the varieties and character.

Experience homebrewer going for his first wine kit

Fermentation went well, seemed to be done in about 10 days, but I left it 13 to rack for clearing so it got enough oak from the chips. Moved to my 6 gallon Better Bottle and degassed today. Finished at 0.991, from 1.096. The hydrometer sample was perfectly drinkable, even without clearing or...

Experience homebrewer going for his first wine kit

Well, I made the kit up yesterday, and it's been in the fermentation chamber all night, warming up from an initial temperature of 66F to 69F now. It started a bit cold because the jugs of spring water I bought were at about 60F, while the juice had been warming for a day in the fermentation...

Experience homebrewer going for his first wine kit

Thanks, I got RC-212 today. I assume the kit has sufficient nutrients for EC-1118, but I understand that RC-212 is quite a bit hungrier, so I'll give it a half dose of Fermaid K, just in case (I have Fermaid K and O for mead making on the new BOMM protocol). More importantly for making the...

Experience homebrewer going for his first wine kit

It arrived yesterday afternoon, and yes, it is EC-1118 in the kit. Looks like a package date from 6 months ago (BBD Oct 2020), so I will be swapping it out. Actually starting the kit has to wait until I'm allowed to put weight on my right foot following surgery though. Should get permission...

Experience homebrewer going for his first wine kit

I'm thinking if the kit does come with EC-1118, I'll swap it out for 71B-1122 or RC-212, whichever I can find at the LHBS. Both sound like they are more suited for a berry fruit forward style.

Experience homebrewer going for his first wine kit

Thanks. I'll check the date codes on the yeast in the kit, and decide from there if I want to get fresh yeast. I think the kit may come with EC-1118 (based on one other thread on here from five years ago), which I wasn't too sure about for a red. I have to go the local homebrew shop anyway at...

Experience homebrewer going for his first wine kit

I've been homebrewing beer for several years, and am venturing into my first wine. I've bought a WInExpert Selection Australian Grenache/Shiraz/Mouvedre kit (my wife lived in Australia for a couple of years where this blend is popular, and it's very hard to find much commercially here). I have...
