    When to bottle

    I have some Cab and some Sauvignon Blanc aging in glass carboys. What would be a general guideline as to how long they should age this way before bottling? Also, I haven't degassed them yet. I'm planning on doing that just prior to bottling. Is that a good idea or not?

    That's a good point about freezer capacity. I planted 5 varieties, 50 plants each of Cab, Syrah, Merlot, Sauvingion Blanc, and Chardonnay. The Cab and Sauvingion Blanc are doing the best. I'll probably have around 200 lbs each for those varieties. The others will have much smaller crops...
