    Making Mulberry Wine, but not sure about primary ferment

    A year old and tasting great! No edge at the end and as smooth as a wine can be. Starting my 2013 batch today. Using a few more Mulberries per gallon this time around.

    Watermelon Wine Advice

    It's almost a year old now. A little too sweet, and I believe the ABV is a little too high. Still drinkable, but would be superb with a 12% abv and a final Sg of 1.020

    Cranberry Wine

    So far so good in the primary. I can already tell this is one I'll be wishing I had made a bigger batch, 6 gal or better. It tastes good off the spoon at this point. Might have to follow Old Whiskers lead and make a big batch of this for the holidays! ;)

    Apple Wine!

    I finally opened a bottle of my Spiced Apple this past weekend. Turned out pretty good! I was told it tastes like a Chardonay and my wife says it's her new favorite. I really didn't expect it as it was the first time for me to add any flavor to a wine that's aging. :n

    Bottled it all yesterday. Apparently it's pretty good since the wife and I finished off a gallon of it already. :ib I'm eager to taste it when it's got a year of aging under it...if it lasts that long! :h

    Making Sassafras Wine

    The 1st batch of this one didn't turn out so well. The flavor and the alchol are a little too far apart for me. This wine is meant to be drank young, so I doubt it will get much better. I'll run with 2nd batch the next time around. Everyone loved it during the holidays.

    I spiced a gallon of this with a cinnamon stick and caramel extract. Smells good but really needs some age to it now. The 6 gallon carboy is just sitting, and doing it's thing. Looks exactly like apple juice, so my son tells me.

    My Mulberry is a little over 6 months old now. The flavors are really coming out nicely, and the edge at the end is almost gone already. Can't wait till late spring to get the next batch of this one going!

    Plum Wine

    Probably could have got atleast twice as much out of the dried plums if I had hydrated them first. Also would have had a more accurate sg at the beginning. It's sweet, but has a solid taste to it. Definently worth keeping. With it being so sweet and made around Christmas time, I'll call it Sugar...

    So far so good, but this stuff is really dark...smells good though. Racking it for the first time today, I think this will take another or racking or two after this. The stuff isn't actually thick, but more like a red wine.

    I threw in a cinnamon stick and a touch of imitation caramel. No oils in the caramel flavoring so I shouldn't haveany problems there. I tried it out on my 1 gallon jug to see what comes of it.

    Not illegal in Missouri. In the US it is but in Missouri law enforcement will not do anything about it. A federal Officer would have to catch you in the act, and catch you drinking it. Production of ethanol is legal as it's a growing popular fuel, making it to drink is not. So yes it's illegal...

    Vidalia Onion Wine

    If you like vidalia onions as an additive in your meal cooking you'll most likely like this wine. Nothing goes to waste either. That part of it made it easier to try it out.

    At first I thought the sg was to high. I went by the recipe for the most part. In the end I'm very glad I did it the way I did. I haven't tried it lately but last time the first half the bottle was awesome!

    I'm thinking of making a 3 gallon batch of this again. The last batch has really impressed! And I just cleared up space in a 3 gal. carboy...hate to let that space go to waste!!

    Fruit Scraps Wine

    I haven't done much with this. I haven't even recorded the recipe or dates of the steps I've taken. I bottled it today to free up my gallon jug for my plum wine and this fruit scraps wine is actually pretty good. Should really be interesting once it gets some time under it's belt!

    Watermelon Wine Advice

    Tried another bottle. I tasted strawberry more than watermelon, my wife says it tastes more like watermelon. This should be very interesting next summer when it comes to age!
