    WineXpert fermentation question

    BJ, it's best to age it longer in the carboy. I did this same wine last year and everything looked clear and so bottled it in clear bottles. Now the bottles are showing sediment. It's a lesson learned by me to give it more time in the carboy.

    WineXpert Choc/rasp port progressing well

    Thanks Wade. This is my first port wine kit out of about twelve kit’s I’ve made and the first to do chaptalisation. Started on 2-19, SG 1.130 and now on 2-24 the SG is 1.040 and just wondered how important waiting to 1.015 was. I’ll wait a couple of more days and check the SG again.

    Why is it important to wait for the SG to get to 1.015 or less before chaptalisation (sugar addition). The sugar addition will only raise the reading .015 points higher max so why not just wait till the SG is .015 less then the starting SG of 1.128 – 1.133 like 1.113?

    Hi Moto, I went ahead and got another Spanish Rose myself while picking up the LE N Z Merlot. I pitched the yeast last night after moving the LE over to a carboy. This time I was planning on stirring the primary a few times before it’s move to the carboy and then continuing to stir it each day...

    I thought I would cut back this year, but you only get one chance with these LE and RQ’s and I would hate to read about how good a kit is and did not make it myself. So besides the Barbaresco I also will be getting: January WE New Zealand Merlot, Feb WE Cabernet Sauvignon, March RQ Red Meritage...

    My mistake I had it listed as release in January. Now I just have to wait that must longer.

    It’s very good and that’s coming from someone who only drinks reds. Mine was stabilized on 9/21, bottled on 12/10 and had it on New Years eve will crab legs. I was also thinking of getting another kit but have enough LE’s and RQ’s already ordered.

    Has anyone heard when Fine Vine Wines will be shipping the Alpine Foothills Italian Barbaresco? I could answer my own question and say right after they receive them. So then the next question would be do they know when they will be receiving this RQ?
