To balance the tartness of the cran concentrate I had to bump it up to 1.030. It will be great chilled. It did cloud up upon back sweetening so hopefully it will re-clear.

Flavored this merlot/cran/lime pee tonite. Used 3 knudsen concentrates and 6 cups of invert sugar. It came out great. The concentrate took it from pink to deep purple. Amazing stuff. It'll be great with thanksgiving. I'll bottle in a few weeks.

Thanks Dan! I made the switch to the lids. I knew the buckets this Festa juice came in were too small. They were leaking all over my trunk! They also started fermenting early, probably during transport. I'll likely switch to carboys soon. Thanks for the lid advice. Mark

I've got a napkin held in place over my juice buckets but foam has soaked the napkin. Is this a problem? Should I switch to loose lids?

Juice in Ma$$ Sheesh, wish I was near that Ohio store. In Mass, Mosti buckets start at around $80 for Ruby and go up from there. Is distance the difference? Gotta keep it colder longer? It works out to about the same price as a Spangols or VR kit at that price for just the juice. Then...
