When I made my peach I had a layer of mold growing on the pulp that had rose to the top. I took a strainer and skimmed it off, add k-meta, and Its cruising along fine, tastes good and all. I'd leave it go, It might be the best wine you ever made.

It started small with 15 gallons, I found a deal on craigslist for more carboys, so I thought no sense in letting them sit around empty. I definitely still learning how to make a good wine, but I like the challenge. Ultimately I'd like to open a winery and stop grinding out tree stumps.
