You could get a kegerator and a nitrogen dispensing system. More $$$ but much more reliable.

If every time you racked you added campden tablets, wouldn't it be unnecessary to top up because the SO2 would form a blanket over the wine?

Is it possible to let the wine degass naturally under airlock? If so, how long would that take?
