I'm keeping the temperature on my second batch a bit higher, hopefully to get rid of some fruitiness and see how it goes as others have suggested that low temps maintain a lot of the juice aromas.

Hi there, I made one batch at 5Gal also. The wine is very fruity and kind of sweet. Could it be because of the higher juice concentration or because I fermented it primarily at around 18 degrees Celsius (64F). Or should I age it longer? I bottled it 3 weeks ago.
