I have made about 6 batches. Half the batches I have made taste amazing but have a yeasty smell. Is this due to me being greedy and getting as much as I can when I rack or could it be due to something else? I have pulled back lately on letting more go down the drain.

Thank you! This really helps. I am fairly new at this and have just followed the recipes step by step. I love understanding why and what causes the effects. I have acid testing strips that I haven't used yet- will start now :)

I understand the amount of dryness is do to how much you back sweeten. I noticed one batch I made the dryness was in the front followed by the flavors- a new batch, the flavors are first- then a little dry. Does anyone know why this happens?
