    Quite a bit hot, but ok! I think that you'll get a better flavor around .090 (white), .010 (red), (or a bit lower).

    . . . but more generic. you will find better results from KV-1116, or other strains. 1116 is a big fermenter as well.

    Before you add simple syrup, add potassium sorbate, but you may want to wait a couple days to get near .995.
