    Excellent point. The latching mech is needed to keep the door tight to the seal, but currently its full of grilling charcoal bags and the door is facing the wall when we are not there. Ill be putting an external padlock latch on for both safety as well as security.

    if you want simple, tasty and cheap, look-up Ed Worts Apfelwein recipe. I think it costs me 5$ a gallon ? ready in 3- 4 months. No racking, clearing, yada yada. Do it all in the carboy. 9% alcohol or so.
