    My JOA is done. Bottled today. It's not going to last six months. It's incredibly tasty! A tad pithy....but it's not overpowering. It's very sweet, but the hubs and I love sweet wines like moscato, so this is great for us! Bolstered by my success, I think I shall make two more gallons!

    I used 10 pounds of grapes, cut back on the water a little and added strained grape juice instead so mine was more fruit than called for. I had been boiling the grapes down and straining the juice out to make jellies anyway so I cheated a bit. I did that because of people's posts about Keller's...

    Update: mustang wine First rack on the mustang wine tonight. SG .998 acidity 6g/L. Tasted a tad musky, very fruity, slightly sweet and very very alcohol forward. >.< My first wine tasting. Was pleasantly surprised though.

    Well, I got it going last night and pitched my yeast today. Starting sg of 1.11 just as Mr. Keller's instructions stated. The juice tasted divine prior to yeast being added (I was nosy).

    Should I take advantage of free grapes?

    I got what we think is 50 lbs. They are fat and juicy but a bit of a bitter aftertaste. Pics to post soon. I went to a tiny little town called Luling, TX to pick. It was a blast. But I learned the hard way to wear gloves with mustangs. Itchy hands are no fun. I'm saving some for jelly too. :)

    lol @ madmikes!! I think I'm going to do as suggested and backsweeten, although I'm nervy about it because this will be my second wine ever. Not certain about shipping fruit half a country away. Knowing my luck, you'd get spoiled grapes....or raisins...or mush in a bag. Grape harvesting begins...

    I personally am not a fan of dry wines, and I've read that Mustang grapes make great dry wines. However......I have a friend who got me a lead on wild mustang grapes. A large amount of them, apparently. Any suggestions on making Mustang grapes into something for a sweet tooth palate?
