OK thanks I figured it was OK but thought I'd ask I'm gonna let it sit now for a few months before I rack again and proly won't bottle until at least a year so hopefully b then it might taste like mead ha ha
OK so I just racked my mead away from the white build up at the top again and its looking a lot better but I took a sample of it and it has a kinda funky taste I don't know how to describe it it doesn't taste spoiled I don't guess but just don't seem right and not very plesent to taste

Starting to see the too you all warned me about but everything else is going good I had to put my primary in the garage today it was fermenting so hard it was stinking up the house but luckily there is only a high of 78 today so it should b good

OK thanks I didn't test pH I need to start doing that I'm still learning I did not add any acid blend and I'm sure not every berry was perfect ripe haha as many berries as I picked I no there's some less ripe ones :) but I used one tablet per gallon like I have all my wines

So I made my must from 30lb of elderberry to make 5 gallons all was well and crushed the berries in my primary and had the prettiest deep purple must until I added my campdeb tablets and it turned green instantly !!!
What happend?? Is it gonna b OK?? Did I just mess up a entire weekend of...
I would but my freezer is so full between the berries,and grapes and I raise quail and have a freezer full of those and other game pluss all my garden produce so I need to start a batch of wine this weekend in a bad way ha ha
