My notes say I added oak cubes, but I didn't indicate if they came with the kit or not.
The skins do make a considerable difference. I make sure to stir really well after adding them and also try to wait 8-12 hours before pitching...

I'm using a Fermonster and bought it just for EM. I'm going to try a small batch of all grape wine with it either this spring or fall.
I've taken a similar approach with ribs in the past. On the kettle for an hour or two, then into the oven. Makes the house smell like the inside...

Ended up also bottling the guava wine experiment. Great flavors and nose. Should do really well in the dog days of summer.
