    Did I let my EC1118 sit too long before pitching?

    Making perry and I rehydrated EC-1118 with pasteurized apple juice before pitching but had to leave it in a covered pot for about 3 hours before pitching. Is it really that bad? How important is it to stick to the instructions on the back of the package?
