What is the best yeast to use for cabernet and petite Syrah to get the best bouquet and fruit taste from the juice?
 
I havent made any serious red grape wines but...

I would guess that your best bet is a combination of yeast strains
Ones I've seen thrown around a lot:

RC212
D21
D80
D254
BM-45
BM 4x4

I would read up on these different yeasts, compare and contrast their differences, and see who works well with MLF and who doesnt - depending on how you're handling that aspect of this..
 
If you go to lalvin.com you will find a yeast chart with their characterics.
Probably the RC-212
I think that is the one I use on my reds. I use several of Lalvins yeasts for my musts.
 
My vote would be for RC 212. I have had great results with this on cabs. Just make sure that you are generous when it comes to yeast neutrient.
