I have about 38 lbs of frozen cranberries. I have some ideas of what I want to do, but yeast is a big question! I've been at morewine reading about the different yeasts. So I was wondering if anyone had a preference for cranberries and/or have used any of the below yeasts. I have included a link to describe the different yeasts I am thinking about using. I am also thinking about 2 different batches using 2 different yeasts to see how much difference there might be:

OK, so after I have narrowed it down to 7 different choices, now I am thinking I should try 4 different batches....that would mean about 9 lbs of fruit per batch yielding about 3 gallons per batch. Any thoughts or help is greatly appreciated! I just read through the thread "Melomel yeast" and thought if might help if I gave more information. Also I am further leaning toward 4 different batches...to one I would like to use jericurl's additions of orange juice/cinnamon sticks/crystallized ginger/oak powder/bananas/vanilla bean and snip of rosemary sprig. One I was going to burst the cranberries in apple cider and since I am now thinking of 4 batches, I am uncertain of the other 2.

I wish I could guide you but I want to say go for it! Love trying ideas and seeing what comes of it. Take good notes and good luck! Your 1st 2 recipes sound great!
