I started my first kit today (IM Green Apple Riesling). I added 7.5 cups of sugar to the mix.


My question is when do you know when it is time to go from the Primary Fermentation Bucket to the Second Fermentation Carboy?


Directions on the kit recommend racking at 1.010 but I added the sugar and thought it my change this SG.

Welcome to the forum! On these kits I typically wait till it's at 1.01 even if I added the sugar. It may take a couple more days, maybe not.

Around 1.020 or so and you'll be fine. Actually any time after any type of violent fermentation is OK. The only real reason they have you use a bucket is the extra 2 gallons of space for it to foam up in. Now if the wine is sitting on oak, leave it the prescribed days to get the oak benefits. That takes prescribed time, Not a certain SG.
