SORRY BUT I CAN BE MISTAKEN BUT A GRAPE ISN'T CONSIDERED CITRUS FRUIT? NOR DOES IT CONTAIN OILS IN ITS SKINS THE SEEDS DO,AND YOU USE A TOOL CALL A MICRO PLANE TO DO THE TASK FOUND AT MOST KITCHEN SUPPLY STORES,SOME TIMES IN WINE MAKING USING FRESH JUICE OR GRAPES YOU NEED TO THINK OUTSIDE THE BOX TO CORRECT PROBLEMS...AT LEAST THATS MY TAKE ON MAKING AND USING ZEST,TO ADD OR BALANCE OUT NUANCES IN WINE.........

Might I suggest that you "train" your palate to detect different flavors in wine. If you want to know how to do this and get a real good laugh at the same time, check out Gary Vaynerchuk's Wine Library TV episode 148. He's a little "over the top" but very educational and the last 10 minutes of this episode are hilarious...

THEY SENSE OF SMELL DETATES THE SENSE ON TASTE OR AT LEAST VERY MUCH CONTRIBUTES TO IT ,IF ONE HAS SINUTIST THE ABILITY TO TASTE DIFFERENT AND DISTINCT NUANCES IS VERY HARD,I MYSELF HAVE THAT PROBLEM TO A LARGE EXTENT SO I USE MY WIFES SENSES TO DIRECT ME,KNOWING HOW TO CORRECT A PROBLEM WINE OR JUST WANTING TO BOOST ITS FLAVOR POTENTIAL,I FOUND IS KEY TO GOOD WINE MAKING,WE HAD A MEETING ONE TIME( WINE CLUB)AND THE TOPIC WAS GOOD WINES GONE BAD AND THE WAYS TO ADJUST WINE WHEN THIS OCCURS THIS NOT ONLY HAPPENS AT OUR LEVEL,ESPECIALLY IF YOUR DOING FRESH JUICE OR FRUIT/GRAPES,WERE CHEMIST,SMELL AND TASTE COMBINE EFFORTS TO MAKE A FINISHED PRODUCT.,BUT ALSO AT A COMMERCIAL LEVEL,HENCE LY BLENDING OF WINES OCCURS,THIS I KNOW TO BE FACT,AT LEAST THATS MY TAKE ON IT AND WHY ITS IMPORTANT TO BE ABLE TO THINK OUT SIDE THE BOX,,,,ASK TEPE....
