Just made an interesting discovery on my MM VN Castel del Papa kit. The wine is happily sitting in secondary, and this morning I looked at the zip lock bag I have attached to the carboy. The K-meta is still in the bag! Apparently I added the potassium sorbate earlier rather than the K-meta. Fortunately, the yeast did its thing anyway and the SG got down to 0.998.

Since I apparently didn't put in K-meta earlier, I'll probably check SO2 before I bottle. Should I add some more sorbate at bottling time? Suggestions welcome.

Thanks -- it's done. I suppose literacy would be a useful skill.

Relax, unless your a chemist the names sound very similar to each other.

Main thing is you caught it in time!

Unfortunately, I did take several hours of chem in college, including organic. I'll put it down to old age and poor eyesight!
