OK Hounddawg, I may try that
ON 6 gallon carboy i double of lemon juice,, use ec-1118, max out my ABV, then come bottle time i pour 1/2 gallon PGA/Ever Clear 180 proof into a 6 gallon carboy then my maxed out skeeter pee, and then run up FSG To 1.040. you can do the math to scale down to a gallon, bad night and a glass will put you to sleep at bedtime,

I am going to try this.
Just to be sure, you start with 1 qt lemon juice in the original 5 gallon recipe instead of two, regular nutrient and tannin
extra sugar to step feed until the EC-1118 gives up at 18-20%
then add 4, or is it 5, more bottles of lemon juice (decreasing ABV),
750 ml Everclear (increasing ABV slightly above what it was prior to adding lemon juice)
and enough sugar to increase sg to 1.040.
This should end with slightly more than 6 gallons.
Clear/Rack normally.
Age 1-2 years prior to drinking.
