This is the first kit I ordered from George late in September.
I waited an extra month to bottle this wine while it steeped in 2 oz.
of oak chips, but I needed its carboy for other projects this weekend,
so I racked it to a primary fermenter...
I had soaked bottles yesterday so they were ready to sulfite this
morning before I racked. I briefly soaked 5 corks in the vinator while
I filled 5 bottles at a time...
Then I corked 5 at a time...
Yield - 30 bottles plus 3 glasses from bottom of the carboy for
immediate consumption It is really quite good for an early wine.
The evening was spent glueing labels on with a gluestick, not always straight I'm afraid. Here are two of the better ones...
And the label itself from the PageMaker file with low-res fuzziness, sorry.
For a first kit, this was a satisfying project. An Old Vines Zin and a
Viognier lined up on deck in carboys, and numerous small-batch fruit
wines, are keeping me well occupied going into winter. I'm afraid I
have to start a mad scramble for lots of bottles soon.
