I had an idea for degassing while thinking about the process of my next Mosti kit (Old Vines Cab).
Once secondary fermentation has completed, it is time to rack completely off the lees into a 6 gallon carboy and degass.
George's video of the degassing stage states that the wine at this
stage is pretty well saturated with CO2 and exposure to oxygen isn't
that harmful, one of the reasons he states that creating a "vortex"
with the mix-stir is OK at this stage.
So, I was thinking that instead of racking straight to the carboy, I
would first rack to a primary bucket. In this bucket, I would
operate the mix stir and complete the bulk of the degassing.
While that is happening, I would quickly clean out the carboy which had
the lees and the oak, sanitize it and then once I was done with the mix
stir, RACK back to the same carboy.
Once back in the carboy, I would attach the brake bleeder and go from there.
Any thoughts on this? Good idea? My thinking is that the
extra surface area of the primary bucket would really help during the
mix stir portion of the degassing. (plus I am running out of available
6 gallon carboys
