How much Elderberry juice to use?

I have read that Elderberry's have a strong flavor. We did use a steamjuicer on our 20-30 lbs of berries. (I lost the sheet that had our exact amount of lbs.)

Being that it is in juice form now how many gallons of juice to use for a 6 gallon batch? I just don't want to add any "extra" juice if i don't have to, the Mrs will make jelly out of the extra.

Also is there a specific yeast that you would use?

I like 1116 or 212 for elderberry.

Check acidity of the juice and go as pure as you can without being over on acid level.
