If anybody has made a elderberry port out there,How many pounds of berrys did you use,and was it too much?I have 30 pounds of them in the freezer, and have never made a heavy elderberry wine.I usually make them on the lighter side.I dont want to have to age it forever for it to be drinkable.HELP!

If you want it to be drinkable, you might want to forego making a port with them. You'd probably need close to 10lbs per gallon, and it would most likely take 5-6 years to become drinkable with all the tannins.

A good Elderberry wine uses around 5lbs per gallon, and takes about 1 year before you can even drink it. However, after 2 years, you are rewarded with a very fine wine! Just keep it in the dark, as it is not color stable at all in the presence of light.
