So I just sampled a taste of my first try at mead. Holy S--t! This has bite.

It is a newborn at 3 weeks old and is sitting at 16% ABV with a possible 1% to go. The honey flavour is very nice once I wait for the initial young alcohol burn to pass.

I can't wait for this to age. Does anyone have a time machine I can borrow to go 2 years into the future so I can see what this mead will be like when it matures? :h
 
Sorry, no time machine. Patience, patience, patience!!! Make something else to drink in the meantime. The summer or mist style wines are ready to drink right away.
 
I've got rhubarb and cherry clearing right now. Can't wait for them either.

It is pure torture.

I found the patience thing the hardest thing to learn.......

Then I realised that my "inner lazy b*****d" was a benefit, if I just made enough batches and didn't do anything stupid, they'd come out fine.......
 
I've been eyeing up the dragon blood recipe.

Another thing i have been eyeing up is to make a wine out of five alive.

How would I make it less acidic without diluting it a lot?
